Easy quinoa chicken peanut bowl

We were away for a 5 day work/school vacation (which ended up being spent in the ER and not at all as planned! Then followed by alll of us sick the entire week!)

When arriving home from vacation, of course there isn’t much in the fridge, luckily I was able to whip this amazing meal up!!! An amazing Peanut sauce chicken quinoa bowl

Quinoa chicken corn almond peanut sauceWhen looking at what to make monday night, I wasn’t sure how in the world I could find anything! I had chicken, some sweet peppers, and nothing else. I started to cook some quinoa (see preperation here). I looked on Pinterest for ideas. Nothing. This seems to happen often! Placing the chicken breast in the crock pot around 2:30p.m. with some PF Chang’s sesame marinade. Rummaging through the cabinets and the freezer, I pulled out some frozen sweet corn that we picked up in Iowa this summer. Adding to this now evolving Deliousness, pumpkin seeds (pepitas) and almonds came to mind. Now, to to figure out a peanut sauce (homemade, always!) I never measure, which is usual. I wish i did! This ended up being absolutely delicious, Pumpkin seeds peanut sauce (see below)

The chicken was in the crock pot with the P.F. Chang’s marinade, I chopped sweet peppers and mixed up the peanut sauce. I added these ingredients to baking pan- frozen sweet corn, Pepitas (pumpkin seeds), chopped almonds, and some broccoli. After those were added I put the chicken with the sauce in the oven, covered by tinfoil.

I put it in the over at 375 for about 30 minutes (remember the chicken was cooking in the crock pot for about 1.5 hours).

peanut sauce:

  • peanut buttter- a big spoonful!
  • mint leaves/shredded mint
  • cilantro (fresh or jarred)
  • rice vinegar
  • Lime juice
  • soy sauce
  • korean chili sauce (i used gochujang)

I mixed this all tougher and added in extra of what I thought! {yep, I never measure}
I put my Quinoa in a bowl and dished out the mix....and devoured every bite. The flavors were amazing!
